Simple Ingredients
- Sweet Potatoes and Yukon Gold Potatoes: This recipe uses both sweet potatoes and white potatoes. Using both for the potato mixture makes this dish so beautiful plus being healthy.
- Onions and Garlic: Any kind of onion will work. Red onion, white onion, yellow onion, green onions, or leeks. finely minced or crushed, fresh garlic is best..
- Jalapenos: Jalapenos and garlic are delicious with sweet potato chunks, a few white potato cubes, and savory spices. Green peppers like bell peppers or a mild fresh green chill can be substituted for the jalapeno.
- Fresh Rosemary and Thyme: If you can’t find these herbs fresh then use a teaspoon of dried for both. Note: these herbs can easily be grown in your Back Yard Garden or in a nice patio pot year-round.
- Seasoning: Garlic Salt or regular salt, pepper, Cajun Seasonings (optional). A chili powder, cumin, and garlic powder mix can be substituted for a Tex-Mex flavor.

How to Air Fryer Sweet Potato Hash
- Step 1: Chop a large, sweet potato into cubes and a few white potatoes into medium-large chunks. Dice the onions and peppers into small to medium pieces. Mince or crush the garlic. Place all of these in a large bowl. Note: Larger pieces take longer to cook.
- Step 2: Stir about 2 tsp of olive oil throughout the vegetables.
- Step 3: Season with spices and mix again.
- Step 4: Preheat air fryer to 390 degrees.
- Step 5: In the preheated air fryer, place the potato mixture in the Air-Fryer basket and air fry at 390 degrees for 10 minutes.
- Step 6: Take the air fryer basket out and add snipped fresh rosemary and thyme. Stir or shake the basket to mix and cook for another 6-8 minutes or until the potato edges are crispy and insides are soft.
- Serve: Place in individual bowls and serve.

A: Yes, definitely! The skillet method will take longer and need more oil, but the dish will be delicious. Baking these in the oven will take twice as long as an air-fryer but the oil ratio to potatoes will be the same.

A. This process removes excess starch from the potatoes. If you do soak them, dry the potatoes really well before you air fry or bake. Otherwise, they will turn out hard and not crispy.

Ingredients
- 1 large sweet potatoes or 3 medium
- 3 Yukon gold potatoes
- 1/2 sweet yellow onion
- 2 jalapenos
- 3 garlic cloves
- 2 Rosemary & Thyme Sprigs
- 2 tsp olive oil
- spray oil
- 1 tsp Cajun seasoning
- salt & pepper to taste
Instructions
- Chop and dice potatoes to your desired size. Note: Larger pieces will take longer to cook.
- Chop jalapenos, onion, and garlic.
- Place all veggies in a medium sized bowl. Drizzle olive oil on top and then spray with spray oil. Mix.
- Add seasonings and a few more squirts of spray oil.
- Place above ingredients in the Air Fryer basket and set to 390° for 10 minutes.
- After it's cooked 10 minutes, add snipped fresh Rosemary and Thyme to veggies, spray with a few more squirts of spray oil and then stir. Return to Air Fryer for another 10 minutes or until desired crispiness is reached.
