Creamy Gorgonzola Blue Cheese Dressing
Creamy gorgonzola blue cheese dressing hits all savory, mild but bold flavor spots. Full of several delectable tastes and textures, this delicious dressing is perfect for a loaded steakhouse wedge salad, a chunky-creamy dip for your favorite raw veggies, and as an addictive dipping sauce for chicken wings and with your favorite chips.
Homemade salad dressings are quick and easy to throw together, cheaper than the bottled stuff and you don’t get all the artificial ingredients that come with store-bought dressing.
Speaking of store-bought and even some restaurant versions of this beautiful dressing, most are way to thick and either bland, sweet, or just taste like a big glob of tangy mayo. This homemade creamy gorgonzola blue cheese dressing has been developed and tweaked over years of home experimenting with the help of a few solicited taste testers.
I’ve used buttermilk instead of milk in this recipe but it’s way to thick and bitter for my taste buds. I tried adding apple cider vinegar in one batch and it was really, really sharp. White wine vinegar was okay in one of the trial recipes, but it still made us pucker. Lemon juice seemed to be everyone’s preferred acid addition overall.
Probably the more important ingredient, of course, is the type of blue cheese you use. Blue cheese is not cheap and buying a really strong type that doesn’t agree with you will ruin the whole recipe and waste an expensive grocery item. That’s why I use my favorite blue cheese, gorgonzola; it hits the taste buds perfectly.
Creamy Gorgonzola Dressing Ingredients
- 1/2 cup mayonnaise: The base for our creamy dressing.
- 1/2 cup sour cream: Adds a tangy richness.
- 3/4 cup milk: For that extra creamy texture.
- 1 cup fork crumbled gorgonzola blue cheese: For best flavor, buy a wedge of blue cheese instead of packaged already crumbled blue cheese, it has less moisture than a solid wedge
- juice of 1/2 of a medium fresh lemon: For a touch of freshness.
- 1/2 teaspoon Worcestershire sauce: Adds depth and umami.
- 3 small to medium cloves of garlic, minced or pressed: For a hint of zest.
- 1 tablespoon of Green Goddess seasoning: For delicious herby flavor. Note: Amazon sells it but buying from Trader Joe’s is almost half the price.
- a couple of dashes of Tabasco Sauce or your favorite hot sauce: Adds a hint of heat.
- Salt and cracked black pepper to taste: Enhances the flavors.
- fresh snipped parsley: Add a little more earthy flavor.
Recipe Instructions
- Step 1: In a medium bowl, measure and whisk sour cream, mayo, milk, lemon juice, Worcestershire sauce, and crushed garlic cloves. Whisk until well incorporated. smooth and creamy.
- Step 2: Add goddess seasoning, cracked black pepper, salt and a couple dashes of Tabasco sauce, whisk until thoroughly combined.
- Step 3: Gently fold in the 3/4 of the crumbled gorgonzola cheese, set aside the remaining crumbles to remain for topping. This gives your dressing that delightful creaminess mixed with bits of solid blue cheese.
- Step 4: Taste and season with salt and pepper. Remember, blue cheese is already salty, so be cautious with the salt!
- Step 5: Refrigerate in an airtight container or mason jar for at least 30 minutes. 2 hours is optimal for the best flavor. Stir gently before serving.
Different Types of Blue Cheese
Blue cheese is full of bold and tangy tastes and each variety has its own distinct flavor and texture.
Roquefort: Strong and tangy, with a creamy texture. It has a distinct sharpness and a slightly sweet finish, with a hint of earthy taste.
Gorgonzola: Creamy but slightly crumbly, a milder flavor than Roquefort.Sharp, nutty, and occasionally has hints of sweetness.
Stilton: Rich and creamy, sharp yet smooth flavor. Complex taste, slightly tangy with nutty undertones.
Cabrales: Intense Spanish blue cheese, very strong and spicy.
Danish Blue (Danablu): Creamy and rich, slightly salty flavor and a little sharp. Smooth and versatile.
Maytag Blue: Domestically produced blue cheese with a crumbly texture Bold, tangy flavor with a slightly sweet and buttery finish.
Bleu d’Auvergn: Creamy texture with a milder tang. Its flavor is earthy and salty, with hints of the stony pastures it comes from.
Serving Suggestions

Tips for Making Your Own Blue Cheese Dressing
- Herbs: Add finely chopped chives or parsley for a fresh touch.
- Heat: A few dashes of hot sauce can spice things up if you like a little kick.
- Creaminess: Adjust the consistency by adding a little bit more milk for a thinner dressing or more sour cream and/or mayonnaise for a thicker texture.
Ingredient Substitutions
- Creamy Subs: If you’re not a sour cream fan, use Greek yogurt or regular yogurt. Light sour cream is a lower calorie option, but the dressing will be a little thinner. Note: there is no substitute for mayo, lol!
- Tangy Taste Options: Instead of using fresh lemon juice you can replace it with white wine vinegar or apple cider vinegar but start out with a small amount like 1 teaspoon adding a little at a time. Note: vinegar will intensify over time.
- Fresh Garlic: While fresh has more flavor, I’ve used store-bought garlic paste (the kind in a tube) in the past and it turned out fine. Granulated garlic powder can also be used but start out with 1 teaspoon as it intensifies over time as well.
- Seasoning Alternative: Soy sauce is a great replacement for Worcestershire sauce in a 1:1 ratio. You can completely omit the Green Goddess seasoning if your goal is traditional blue cheese salad dressing. Below are the basic ingredients for Green Goddess seasoning if you want to experiment creating your very own version of this perfect dressing.
Basic Green Goddess Seasoning Ingredients:
- Dried minced onion
- Salt
- Granulated garlic
- Ground black pepper
- Dried chives
- Dried green onion
Storage
Keep dressing in the refrigerator in airtight container for up to 1 to 1.5 weeks.
Dressing will intensify in taste over time.
