Homemade Cherry Pie Filling

– Drain Bing cherries, reserving juice – combine sugar, cornstarch, and cherry juice. Whisk over low heat  – Add cherries and cook over medium-low heat until thick – Stir in lemon juice, almond extract, and cold butter  – Transfer to a bowl and chill

Almond Shortbread Crust

– In a food processor, combine flour, quick oats, confectioner's sugar, sliced almonds, cardamom (optional). – Add cubed butter. Pulse until the mixture resembles coarse crumbs. – Press the mixture into baking dish, – Bake until golden brown. Let it cool

Creamy Cherry Fluff

–Beat cream cheese with confectioner's sugar  – Add almond extract and heavy cream until the mixture is fluffy. – Fold in half cherry filling and half Cool Whip. Repeat with the remaining cherry filling and Cool Whip. Mix

Assemble & Freeze

– Spread cherry fluff over the cooled shortbread crust. – Break chocolate bar into chunks & sprinkle over the top. – Cover with plastic wrap and freeze for at least 4 hours. – Slice and Serve!
