MexiRolls
These MexiRolls really hit that spicy spot! With only 5 ingredients and 2 WW Freestyle points each they are bound to be a hit with the cook and the crew. The assembly and cook time takes about an hour but you have a really good, satisfying lunch or snack for the rest of the week. They are also very freezer worthy if you wrap them up in parchment paper and freezer bags.
I find wonton wrappers are a lot easier to work with than flour tortillas and have fewer points than most store bought tortillas. Plus, they bake up prettier than regular tortillas especially if you go that extra step of brushing them with egg white wash (which I didn’t this time around).
I’ve been on weight watchers on and off most of my life (really since I was about 11), and the latest version is the best yet! The Freestyle Program has so much more variety with over 200 items on the zero points list. This recipe has 3 of those items; 4 if you want to add chicken.
The egg roll wraps and the cheese are the only items that have points! Fat free refried beans, corn, jalapenos, chicken, and of course the chili powder are FREE! You can eat as many of these items as you want!!! No need to track them! And if you’re a weight watcher you know how great that is!
I chose to layer the ingredients instead of mix them all together. Some recipes for these little “burritos” suggest you mix them all together but I didn’t have grated reduced fat cheese on hand. Layering the ingredients makes this tastes fresher and crispier.
There are two ways you can roll these babies up…sides first or bottom first, kinda like swaddling:) I did it both ways and I felt like the bottom first worked better; the melty ingredients didn’t ooze out as much.
I also thought it helped to make a little fold with your index fingers in the space between the filling and the wrapper. Then I folded the sides across. Helpful Hint: semi wet fingers help “cement” the wonton wrapper together. A cup of water nearby is very convenient.

After they’re all wrapped up, spray oil on the pan and on the tops, pop them in the oven for about 20 minutes turning them over to brown on both sides.
I can’t tell you what a big hit these are with kids! The only problem is your family will want you to make these every week!.

Ingredients
- 1 Won Ton Wrapper
- 1 tbsp Fat Free Re-fried Beans
- 1 tbsp Southwestern style corn
- chopped jalapenos
- .5 slice of reduced fat mild cheddar cheese
- Chipolte Chili Powder
Instructions
- Preheat oven to 4250
- Lay wrapper on cutting board. Spread re-fried beans in the middle of the wrapper; top with corn, jalapenos, then top with 1/2 slice of cheese. Sprinkle chili powder over ingredients. Fold up as shown above.
- Spray cookie sheet with spray oil. Place MexiRolls on sheet in rows. Spray tops with spray oil. Cook in preheated oven for around 20 minutes (or until browned), turning over half way.
